Stuffed Jacket Potatoes

There's something so comforting about potatoes, I can't seem to have enough of them! The best part is that they're a good form of carbs for you. alright, so I probably wont end up eating 5 of these babies, although I think I could give it a try, but you bet I wont be stopping at just one either!



These Jacket potatoes are easy and fun to make. It took me about 45 mins to make them and most of the time the work was being done by the gas or the oven. I have layered these potatoes to give them more amazing flavour and add colour as well (did I mention that I like it when my food is colourful! Yes, I'm such a kid!) Here's how you can make them too. All you need is

For Jackets

6 fairly large potatoes
1 cup corn
3-4 Spring onions/ scallions
Parmesan cheese
1 chicken breast grilled with salt, pepper and lime juice
Salt and pepper
1 1/2 tsp Oregano
1 1/2 tsp dry rosemary
2 tbsp olive oil
Pinch of love

For Pizzaiola sauce

4 big tomatoes, diced/ 1/2 can crushed tomatoes
4 cloves garlic finely chopped
1 tsp freshly ground black pepper
1 tsp oregano
1 tsp parsley/ 6-8 fresh basil leaves
1 tbsp olive oil


Making the Pizzaiola sauce:

Take the olive oil in a an and add your chopped garlic to it. The finer it is chopped, the better but do not grate it. Toast it for a couple minutes till it turns golden in colour. Add the tomatoes, salt, pepper, oregano and basil/ parsley and simmer for around 15 mins. Adjust seasoning and if it tastes too acidic, add a tsp of sugar to balance it out.

Meanwhile, for the potatoes, pressure cook them/boil them till they are cooked through. cut them in halves vertically and scoop out the middle. Take care not to tear the jacket. Be gentle. I left out almost  1/2 cm on the edges. Boil the sweet corn and chop up the scallions. Combine the scooped potatoes with the corn and scallions. Add the shredded chicken breast to the mix. Add the seasonings and herbs of your choice and don't forget to add your love. 

Assembling

Preheat oven at 350F or 180C
Take the potato jackets and layer your pizzaiola sauce onto it. Now scoop the mix of potatoes, corn, scallions and chicken into the jackets. Top it up nicely. Grate Parmesan over it, goes well with cheddar as well but Parmesan adds that salty crisp to it. But feel free to use whatever you like. Oil your baking tray with a little bit of oil an place the potatoes on it. Brush the sides of the potatoes with a bit of oil or butter.
Pop them in the oven for bout 10 mins till the cheese turns golden in colour and the potato skins are crispy. Take them out of the oven, be careful for they are hot! Transfer them onto the serving platter and garnish with scallions or  parmesan and serve these wonderful Jacket potatoes with love as a side or as a meal itself! I served them with some oven baked potato crisps.
