Huevos Rancheros


A day in the life of a foodblogger:

Go out and get the required material

Clean and prep, and then get cooking!! 

Are you with me now?! Are ya?!!? Come on, I'm testing your love, without any formal introduction, I'm leading you into the land of bold flavours.... get on the train, will ya!! (lets all pretend you didn't read the title or the recipe index) 

I can only guarantee that if you're having this for the first time, you're going to be blown away with the taste and since its so healthy and super filling, it will get you going for the rest of the day! 

Alright, so you know now, its breakfast... not delving into the details lets get movin'...

Jeeez!! I could never write a mystery novel. I would totally suck at it. I'm going to blame you for coaxing out what we are making today. Its the very famous Huevos Rancheros or Eggs made Tex mex style.  A crisp tortilla topped with refried beans topped with a semi fried egg topped off with the delicious spicy tangy salsa. There! now you know! Hope you're happy. Now, shall we start?! 



I'm making my own tortillas here but you can use the ready made ones.

You'll need

For the tortillas

1/2 cup flour
1/2 cup wheat flour 
1/2 cup cornmeal
1/2 tsp salt
150-175 ml water

For the refried beans 

1 can refried beans
1/2 red/pink onion, diced finely
1 garlic clove minced finely
1/2 tsp salt (optional)
1 tsp fresh roasted and ground cumin
1 tsp oregano 
1/2 tsp paprika or red chili powder depending on how much heat you like

1 egg per tortilla
Avocados (optional)
Lime and coriander to garnish
Pinch of love

Method

I began by kneading the flour. Take the three flours in a bowl. You can use just plain flour and corn meal if you like. I prefer adding wheat flour since it makes the tortilla healthier. 



Add in the pinch of salt. 



Add in half of the water first and then gradually keep adding water till your dough comes together. 


It barely takes a couple of minutes. 



When you press the dough with your thumb, the indent should stay for 10 seconds before coming back to its original shape. Cover and allow the dough to rest for 10 minutes.



After 10 minutes, divide the dough into 6 golf balls sized balls. Take each ball individually and roll it out



Roll it out till it looks like this, 1-2 mm thick and about 8"-9" in diameter.



Place a griddle on medium heat and when its hot in a couple of minutes, place that rolled out tortilla on it. Flip the tortilla over after 45 seconds or when it starts forming tiny bubbles on the surface like this


Flip and cook on the other side as well. Let it cook for 45 seconds as well. 



There you have it. Home made tortillas! 



Your fresh, hot tortillas, use them any way you please. 



For the refried beans, You can use them directly out from the can after heating them BUT, I like to give this an absolute Mexicano twist!! Try it and you'll never go back to the regular refried beans. In a skillet, add some oil on medium heat



Add in the finally chopped onion and minced garlic and saute for about 1 minute till the onion turns translucent.



To this add the cumin



and the oregano



And in goes the red chili and salt 



There you have your basic Mexican spice mix! 



Empty your can of refried beans in the skillet along with 2-3 tbsp of water on that spice mix. Mix well and let it cook till excess moisture has evaporated. This should take around 3-4 minutes on low heat. 



I also added in smoked paprika chipotle seasoning just to add to the flavours. This is optional. You can just add in smoked paprika if you want. 




To assemble the Huevos Rancheros, cook the half fried egg. 

With a little oil brushed on one side of the tortilla cook it on a griddle till the side becomes a little crispy. 



Spoon over 2 tbsp of refried beans on it and smear it around. 



Place the half fried egg over it. Spoon some salsa asada or regular salsa, but please do try this with the roasted tomato salsa, it just takes it to a whole other level. Garnish with avocados or guacamole. Yummm yumm!! 



Try and keep the yolk runny unless you don't prefer a runny yolk which doesn't really make sense and we really should re-evaluate our friendship. Just look at this beauty!!
