Choco-chip Cookie Cakes in a Cup
Let me catch my breath! For two reasons!
1. for the really long name of these very simple Choco-chip, cookie cakes in a cup. For further reference, I will be calling them CCCCIC
2. For how excited I am to share with you these. I have two reasons for that too...
a. These are sooo-ooohh delicious
b. Made them as a Father's day gift to my dad.
All the cliches about Father- how my dad is my first love, how he is my hero, how no man will ever compare to him, how he has spoilt me, how I am his princess, how he still calls me his Doll are so true!
My dad is my rock, my pillar of strength. A man of few words, he is my sweetest most ardent admirer. He is one of those people who personifies the term Big Bear to the T.
And the best part is he makes my life so much easier to live. He LOVES the cakes that I bake. I mean how adorable is that! Whenever I bake a cake in the kitchen, he is the first person who is ready and waiting for me to take my pictures so that he can then taste that first slice. And the expression that he always has, its the same expression I used to have on my face when he used to come and pick me up from school when I was 3-4 years old- or that whats my mom tells me.
Well I was talking about how he makes my life easier. If ever I want to make his day special, all I have to do is spend some 30 odd minutes in the kitchen and cake a cake for him. Thats it! Thats all it takes to make him smile like he is the happiest man on the planet. Oh how much I love this big cuddly sweet man!! And for this Father's day I baked him his favourite choco-chip cookie cake in a cup. Just a little different to look at from my Cookie dough cupcakes or my Giant chocolate chip cookie.
Maybe he get his love of this flavour from me or maybe I from him, who's to know! Lets just make this and celebrate for the Dads all around!

You'll need
100 gms butter (I used salted)
3/4 cup loosely placked brown sugar
2 tbsp condensed milk
2 eggs
1 tsp vanilla
1 heaped cup of flour
1 1/2 tsp baking powder
pinch of love, maybe add another pinch to make it extra special
1 cup semi- sweet chocolate chips (more if you prefer)
Sprinkles (optional)
Method
Preheat your oven to 180C/ 350F and oil your cups. You can also use your cupcake moulds for this. I just wanted to serve this as a part of breakfast which is why I used cups.
In a bowl or a food processor, take the butter and sugar and cream them together.
Add in the eggs and vanilla and whisk till frothy.
Add in the condensed milk and whisk again.
Whisk together the flour and baking powder so that they are mixed well. Add that to the wet ingredients.
Add the chocolate chips and whisk till its all combined.
Make sure to scrap the sides of the bowl to mix everything well. The batter should be rich and glossy.
Divide and spoon the mix in the cups. scatter a few chocolate chips on the top to make it look all purrrdayy! Fill about 2/3rd of the cup. I filled it around 3/4th and the batter fluffed up and started falling around the edges. It was more than the cup could handle. I had to scoop up a spoon from each and well the cakes sank in the middle because of that and there was gooey mess all around the cups. So just trust me, just fill the cups 2/3rd.
Bake the cakes for about 12-15 mins depending on your oven. A toothpick inserted should come out clean. Your choco-chip cookies in a cup are done! Sprinkle some sprinkles on it and some choco- chips too cause one can never have enough chocolate chips!
Its so moist and crumbly at the same time!
And how pretty! Tell me your dad won't like this! Or your mum, or even you for that matter! I made 4 of these cups because I am my father's daughter and love them as much as he does! Gonna sneak one for myself. But Shhhhh...... don't tell him that! Thanks for your discretion.
I don't know why I lit the candle. One doesn't light candles in cakes for Father's day, do we?! Guess they could be made for someone's birthday too, huh?! Maybe I was going for making it more festive and special. Its a special occasion afterall. Happy Father's day to all the dads out there! Indulge!
